SUBSTANCE: method involves grinding chicory roots by rolling to particles size 1 mm, not above, extraction with 70% ethyl alcohol in the ratio raw : extractant = 1: 6 and then with cold water in the ratio raw : extractant = 1: (2.5-3.5). The end product is extracted from grist with water at 90 C in the ratio raw : extractant = 1: (6- 8) followed by evaporation under vacuum to obtain the concentrate containing 25-30% of total substances to be extracted with water. Concentrate is cooled, treated with 96% ethyl alcohol in the ratio concentrate : ethanol = 1: 2, filtered, washed out and dried. EFFECT: increased yield and purity of end product. 3 tbl _
