FIELD: dairy industry. SUBSTANCE: method involves preparing a homogenous suspension from milled chick-pea beans followed by extraction for two stages: at the first stage extraction is carried out at water temperature 83-90 C for 3-5 min and at the second stage at water temperature 55-60 C for 52-55 min. Fractions are separated, proteins of soluble fraction are coagulated by addition of CaCl2. Precipitated protein is mixed with insoluble fraction and amino acid glycine is added in amount from 0.03+ACU- to 0.3+ACU- depending on storage time. Invention can be used in production of dairy-protein foodstuffs. EFFECT: enhanced efficiency of protein and assimilability of nutrient substances of product. 3 cl, 1 tbl
