FIELD: wood processing. SUBSTANCE: method of production of quercetin involves the oxidation of larch wood with sodium nitrite and hydrolysis by superheated vapor simultaneously at 190-210 C, under pressure 3-4 Mpa for from 100 to 200 s followed by rapid decompression. Invention can be used for production of valuable chemical substances, in part, quercetin that is used in medicine for treatment of patients with cardiovascular diseases and in food industry as an inhibitor of oxidation of oils and lipids and in analytical chemistry as a chelate agent in assay of metal ions. EFFECT: simplified process, decreased numbers of stages, abrupt decrease of time of process of oxidation of dihydroquercetin to quercetin. 9 ex
