FIELD: evaporation and thickening of solutions; method of evaporation and evaporation apparatus; chemical, petrochemical, oil, pharmaceutical, food-processing and other industries. SUBSTANCE: proposed method consists in evaporation of liquids in tubular evaporator by conducting the process in pulse mode at varying reduced pressure delivered to system in such way that its magnityde in at least two tubes interconnected by means of communicating vessels should be different. Evaporator includes evaporation apparatus with vertical tubular heating chamber provided with inlet pipe union and outlet pipe union for escape of heat-transfer agent to inter-tube space; evaporator is provided with unit for delivery of solution to be evaporated which ensure communication of liquid in tubes; evaporator is also provided with separating unit; apparatus for building-up negative pressure in system which is connected with outlet of evaporator apparatus and separating unit. Said apparatus, for example vacuum pump is connected with outlet of tubes of heating chamber through distributing unit located in separating unit; it is so designed that different negative pressure is built up in at least two different tubes of evaporator. Proposed vacuum evaporator makes it possible to concentrate thermolabile foaming products at low temperatures and to avoid their decomposition. Proposed has capacity of 150 kg/h by evaporated moisture at temperature of carrier of 90 C and its flow rate of 8.0 cu.m/h; temperature of solution being evaporated is 45 C.
