FIELD: food-processing industry. SUBSTANCE: unit has set of molds made in the form of horizontal troughs arranged in side-by-side relation, parallel one with respect to another. Trough bottoms are faced downward and their open tops are oriented upward. Closure is connected to related trough and is extending under respective bottom. Each set of molds is joined to supporting devices allowing units to be held in stacked position. Closure members close openings of trough arranged below unit. Trough is attached to respective closure member so as to define hermetically sealed pipeline. Pipeline is adapted for receiving fluid, which withdraws heat for treating through heat-exchanging process of food products contained in said troughs. Apparatus has heat-carrier source and heat-carrier discharge device. Each unit is connected to heat-carrier source and to heat-carrier discharge device. Unit and apparatus may be used for cooking ham. Unit and apparatus of such construction allow food products to be thermally treated without contacting with heat-carrier fluid.
