FIELD: biotechnology, microbiology, food and medicinal industry, fodder production. SUBSTANCE: protein biomass is grown by submerged culturing Panus tigrinus 3-204 VKPM F-810 in milk whey under aeration condition at pH 5.8-6.5, temperature 32-34 C followed by separation of biomass. Removal-addition method of culturing is used preferably for 60 h using removal of culture in the amount 40-50% of total volume of cultural fluid. Method ensures to obtain biomass with high content of protein and some physiologically active substances (unsaturated fatty acids and complete set of mineral macroelements and trace elements in easily assimilable form) activating the function of many enzyme systems in human body.
