FIELD: refrigerating equipment used in food-processing industry. SUBSTANCE: apparatus for fast freezing of dough semi-finished products has preliminary cooling chamber, fast freezing chamber, glazing chamber, and conveyor system single for mentioned chambers. Chambers are interconnected through main air pipelines. Air supply and discharge fans are mounted in main air pipelines. Steam generator is positioned in main pipeline for supplying air into preliminary cooling chamber. Such construction increases yeast cell survival rate during freezing and storage.
