FIELD: sugar production, specifically, technological control over degree of depletion of molasses. SUBSTANCE: procedure provides for establishment of dry substances, sugar, non-sugar in starting molasses and for heating of sample to non-saturated state in thermostated vessel. Crystals of sugar are placed into gauze cylinder which is positioned in molasses. Crystals in gauze cylinder are subjected to vibration. Electric resistance of molasses is measured continuously in process of crystal vibration. Crystals are dissolved in molasses by vibration to its saturation. Obtained data are used to calculate maximum possible content of dry substances and purity of saturated molasses at centrifugation temperature of sugar massecuite in final product is computed by known mathematical formulas with due account of obtained data. EFFECT: increased accuracy of determination of purity of saturated molasses. 2 tbl
