FIELD: food-processing industry. SUBSTANCE: macaroni press has flour and water mixer and dough mixer, which are connected to one another. Each of said mixers has shaft with blades and independent drives. Extruder connected to dough mixer has screw located inside it, water jacket rigidly fixed on extruder and connected to water source, vacuum pump connected to extruder, replaceable die arranged in extruder end part, macaroni product length cutting device equipped with replaceable knife positioned at end part of extruder and provided with drive mechanism. Screw surface is divided into three stages. Second stage is positioned in the vicinity of inlet opening connecting dough mixer with extruder and makes stage for dosed feeding of dough mass into third stage vacuumizing zone. Second stage has channels with effective section area smaller by five-ten times that of screw channels of first and third screw stages. Extruder is equipped with accumulating chamber rigidly connected to extruder with portion of casing side surface for catching particles of flour products at the initial operating stage of press. Press of such construction allows non-homogeneity of dough mass in vacuumizing zone inside extruder to be maintained. EFFECT: increased efficiency by mechanized dough kneading, forming and cutting of macaroni products. 2 cl, 5 dwg
