FIELD: fish industry. SUBSTANCE: method involves exposing raw fish to electric current with following treating with salt mixture. Electric processing is carried out for time interval of from several seconds to 1.5 s. Electric processing during period preceding salting process is short enough and is not accompanied with chemical reactions in zones adjoining electrodes and does not involve participation of salt ions, products of which tend to deteriorate quality of finished product and are hazardous for human health. Electric processing does not restrict selection of fish salting methods and finished product package and storage methods. Method allows simplified, low- cost equipment to be used for preliminary processing of raw material.
