FIELD: food-processing industry. SUBSTANCE: method involves extracting bitter substances from citrus fruits by means of non-polar liquefied gas; treating with preparation produced by sequential extracting of Mortierella bainieri micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water; joining first extract with solid residue; using preparation in an amount of 0,5-1•104 mg/t; holding for 2-5 hours; impregnating with liquefied ammonia at pressure exceeding atmospheric pressure; releasing pressure to atmospheric value at rate providing freezing of fruits. EFFECT: increased resistance of juice to bacteriological damage and elimination of juice opalescence.
