FIELD: heat treatment of injected foodstuffs to preset temperature. SUBSTANCE: device for continuous heat treatment of injected foodstuff flow has, at least, unit for preliminary heating of foodstuff to preset temperature; pipe for foodstuff holding, and, at least, one cooling device. Pipe for foodstuff holding consists of two parts. The first part is made in form of coil, and the second serves for control of holding time at preset temperature. Holding of foodstuff flow is effected with regulation of time of its residence at preset temperature by successive supply of coolant to one section of holding pipe beginning from its end.
