SUBSTANCE: method involves preparing raw material, such as saiga antelope meat, in an amount of 15-25% by total weight of raw meat material; tendering by mechanical processing and chemical processing by, for example, 9%-acetic acid used in an amount of 0.05-0.15% by weight of raw meat; preparing meat farce by providing enzyme meat tenderization with the use of, for example, beef pancreas extract used in an amount of 1.5-2.0 by weight of meat farce; molding; oiling molded sausage product with smoke flavoring preparation and providing combined smoking procedure.
