FIELD: wine production. SUBSTANCE: method involves heating material at inlet end of apparatus; ionizing material; ionizing bentonite; clarifying with bentonite solution; fining with gelatin solution while mixing; providing cold treatment in through flow; pouring from sediment and settling. Apparatus has receptacle vessel with heater, material ionizer arranged downstream of heater, bentonite ionizer, bentonite and gelatin dosing devices, reactor with mixer, pouring vessel, and sediment vessel. Refrigerating chamber is positioned downstream of reactor. Grounded stainless steel electrodes with breaker are located in pouring vessel.
