FIELD: technology of canning industry. SUBSTANCE: method involves preparing raw, its packaging into container in combination with boiled water, sealing and sterilization. Before packaging a preparation is added to boiled water. The preparation is prepared by sequential extraction of biomass of micromycetes Mortierella sarnyensis with nonpolar extractant in supercritical state, water, alkali, water, acid, water, alkali and water and the following combination of the first extract and solid residue. The preparation is taken in the amount 0.2-0.5% by preserves mass. Invention provides enhancing quality of preserves and to reduce its corrosion activity that reduces the probability of chemical bulging of cans. EFFECT: improved producing method. 2 tbl
