FIELD: biotechnology, microbiology of food preparation. SUBSTANCE: procedure provides for measurement of volume of fermentation system, preparation of reacting mixture, its incubation. Thereafter certain volume of carbon dioxide is fixed with the help of membrane manometer and Mendeleyev-Clapeyron equation and time spent to isolate this volume of carbon dioxide is recorded. Obtained results are used to evaluate fermentation activity of yeast. EFFECT: enhanced accuracy of obtained results, avoidance of influence of conditions of experiment on results and reduced consumption of reagents. 1 dwg, 1 tbl
