FIELD: baking industry. SUBSTANCE: method involves preparing yeast leaven culture; sowing commercial cultivated yeast with resultant culture and growing commercial yeast; during growing of commercial yeast, separating part of cultural liquid with yeast culture at growing stage determined by formula where G is accumulation of yeast, kg; τ - is growing time, hour; feeding yeast culture to commercial yeast growing stage for obtaining of sowing culture for further use in independent commercial yeast growing stage. Cultural liquid and yeast culture are used in an amount equal to dose to be sown, said dose being sufficient for independent commercial yeast growing process. EFFECT: reduced consumption of power per unit of base product owing to decreased number of stages for preparing of sowing yeast culture, increased efficiency of commercial equipment and provision for automatic withdrawal of cultural liquid. 6 dwg, 2 ex
