FIELD: microbiology.

SUBSTANCE: apparatus for growing bakery yeast consists of a vertical tank with a central circulation cylinder, with an aeration system, water and nutrient supply nozzles, washing head nozzles, a reseeding pipe and a biomass discharge line, as well as an upper air discharge pipe, wherein housing of apparatus is made of corrugated steel, connected by stiffeners with central circulation cylinder, and the aeration system is made of radially arranged dispersing elements by its rigid connection with the circulation cylinder in the horizontal plane, and in the vertical plane are located at level of 70 % of the upper edge of the circulation cylinder, the pipe for air discharge and creation of vacuum is made with possibility of connection to a vacuum pump.

EFFECT: invention makes it possible to enhance strength characteristics of walls of yeast-growing apparatus to ensure operation under vacuum, as well as to intensify process of mass exchange with minimum air consumption.
