FIELD: production of gelling concentrate, containing structure-forming agents of plant and microbial origin.
SUBSTANCE: claimed method includes preparation of white beet root crops, thermal deodorization with carbon dioxide, pressing to produce juice and bagasse; bagasse hydrolysis with liquid phase separation; blending juice and liquid phase; liquid ammonia feeding into blend; concentration by evaporation in vacuum; concentrate treating with liquid carbon dioxide; and heating up to 60°C or more. During thermal deodorization carbon dioxide is used in above-critical state in ultrasonic field wherein simultaneous white beet sterilization is carried out. Pressing is carried out under aseptic conditions; bagasse hydrolysis is carried out by cocultivation thereon citric acid fermentation mycelial fungi of strain Trichoderma and Aspergillus. Extract, obtained by extraction of biomass of Mortierella sepedonioides micromycete with carbon dioxide in above-critical state in amount of 2 mass % as dry matter, is fed into blend together with ammonia. After extraction with carbon dioxide in above-critical state mass is subsequently extracted with water, alkali, water, acid, water, alkali, and water. Obtained solid residue is treated with liquid ammonia and alkali and fed into concentrate treated with liquid carbon dioxide in amount being equivalent (in terms of biomass consumption) to extract introduced into blend together with liquid ammonia.
EFFECT: increased target product yield and product with improved structure-forming properties.
