SUBSTANCE: method involves preparing carbohydrate-containing jellying concentrate by squeezing out juice from prepared sugar beet root crops deodorized with supercritical carbon dioxide, extracting residues in mixing with extractive water volume and liquid hydrogen chloride, blending juice and extract followed by addition to the blend of liquid ammonia and supercritical CO2-extract from biomass of micromycetes Mortierella sepedonioides. Then biomass is extracted by the known technology for preparing a solid residue that is treated with liquid ammonia followed by concentrating the blend, treatment of concentrate with liquid carbon dioxide, mixing with treated solid residue of biomass of micromycetes Mortierella sepedonioides and heating the mixture to temperature 60°C, not above. Invention provides preparing the concentrate with the improved structural-forming capacity and enhanced thermal stability.
