FIELD: fish-processing industry.
SUBSTANCE: fish-based food product comprises two materials, i.e., pasty material and fibrous material. Pasty material is air saturated by structuring. Product includes individual fibers or bundles of fibers of diameter of from 1 micron to 1 mm and has non-homogeneous structure and solid and elastic whole consistency of muscular tissue of fish or crustaceous. Fibrous material is produced by extrusion procedure combined with steaming-through procedure to form mesh of macroscopic fibers having diameter varying from 0.1 mm to 1 mm, said fibers being branched into microscopic fibers having diameter of from 1 micron to 0.1 mm. Method involves steps of producing fibrous material and pasty material; mixing fibrous material with pasty material; forming mixture. Pasty material is structured by adding air. Apparatus has fibrous material producing device, pasty material producing device, device for introducing of air into pasty material, as well as forming, thermal processing, dyeing and mixing devices.
EFFECT: provision for producing of multiple-structured product with structure resembling natural fish and crustaceous meat.
