FIELD: food industry.
SUBSTANCE: invention relates to meat analogue production. The method envisages usage of a device in the form of a screw feeder including sections of feeding and compression and a dosing section. The screw feeder has internal and external heating sources ensuring thermal treatment of an emulsion in the process of its movement from the inlet hole of the feeder to the outlet one. The dosing section of the screw feeder ensures low shear force allowing the meat analogue discharged from the device to have a preset texture and structure.
EFFECT: invention allows to produce a meat analogue the appearance and surface texture whereof are similar to those of natural muscular tissue.
