FIELD: food processing industry, in particular canner industry.
SUBSTANCE: claimed method includes fruit preparation, addition of sugar solution, cavity fruit crushing in sugar solution and puree separation under aseptic conditions. Cavity crushing is carried out by dispersing under atmospheric pressure in mixture of fruit with sugar solution and myscelle obtained from biomass of Saprolegnia parasitica micromycete by extraction with non-polar liquefied gas. Then biomass is subsequently extracted with water, alkali, water, acid, water, alkali, and water. Obtained solid residue is introduced in sugar solution in amount of 0.06 % based on fruit mass.
EFFECT: method with decreased energy consumption; target product with improved quality and increased aliquation resistance in storage process.
