FIELD: food processing industry, in particular canner industry.
SUBSTANCE: claimed method includes fruit preparation, their cavity crushing in liquid medium in rotor-cavitational extractor, puree separation under antiseptic conditions, addition of sugar solution, and sterilization. Cavity crushing is carried out by dispersing under atmospheric pressure in mixture of fruit with myscelle sugar solution. Myscelle is obtained from biomass of Mortierella humilis micromycete by subsequent extraction with non-polar liquefied gas, water, alkali, water, acid, water, alkali, and water. Obtained solid residue is introduced in sugar solution in amount of 0.06 % based on fruit mass.
EFFECT: target product of improved quality, reduced energy consumption.
