FIELD: food industry.

SUBSTANCE: carbohydrate-containing jellying concentrate is prepared by squeezing out juice from sugar beet prepared with deodorized supercritical carbon dioxide, extraction of residues in mixing in extractive volume of water and liquid hydrogen chloride followed by blending juice and extract and addition to the blend of liquid ammonia and supercritical CO2-extract from biomass of micromycetes Mortierella pusilla. Then biomass is extracted by the known technology for preparing a solid residue that is treated with liquid ammonia, concentrating the blend, treatment of concentrate with liquid carbon dioxide, mixing with treated solid residue of biomass of micromycetes Mortierella pusilla and heating the mixture to temperature 60°C, not less. Invention provides preparing the concentrate eliciting the improved structural-forming capacity and enhanced thermal stability.
