SUBSTANCE: carbohydrate-containing jellying concentrate is prepared by squeezing out juice from sugar beet prepared and deodorized with supercritical carbon dioxide in mixing in extractive volume of water and hydrogen chloride followed by blending juice and extract, addition to the blend of liquid ammonia and supercritical CO2-extract from biomass of micromycetes Mortierella gracilis. Then biomass is extracted by the known technology for preparing a solid residue that is treated with liquid ammonia, concentrating the blend, treatment of concentrate with liquid carbon dioxide, mixing with treated solid residue of biomass of micromycetes Mortierella gracilis and heating the mixture to temperature 60°C. Invention provides preparing concentrated with the improved structural-forming capacity and enhanced thermal stability.
