SUBSTANCE: potato is washed and controlled followed by peeling, additional peeling, cutting, thermal treating, drying off, packaging and freezing, treated with mixture of arachidonic acid lower alkyl ester with chitosan and kept for 5 h. Method provides improving organoleptic properties of the end product.

EFFECT: improved preparing method, improved properties of product.
