FIELD: food processing industry, in particular canner industry.
SUBSTANCE: claimed method includes raw material washing, inspection, and impregnation with liquefied gas, selected from group containing inert gases, nitrogen, nitrous oxide, carbon dioxide and mixture thereof under above-atmospheric pressure, decompression to atmospheric pressure with simultaneous raw material crushing and sterilization. Further crushed raw material is decanted under aseptic conditions and centrate is pre-packaged under aseptic conditions. Liquefied gas is used in composition of miscella obtained by extraction with liquid gas of biomass of Mortierella indohii micromycete, and decantation is carried out in gas flow, escaped in decompression process.
EFFECT: target product with improved organoleptic characteristics and increased content of bioactive substances.
