FIELD: food-processing industry, in particular, confectioneries and snacks prepared from cereal product and chocolate.
SUBSTANCE: food product containing frangible center in chocolate casing is prepared from cereal crop flour. Center is made in the form of hardtack produced by cutting bread into parts and drying thereof to relative moisture content of 2-12%. Chocolate casing is produced by applying chocolate onto center in pelleting drum, with center to chocolate casing weight ratio constituting 1:1-1:5.
EFFECT: provision for producing of novel chocolate product with moderate or minimal amount of sweet substance, specific taste imparted by combined fried hardtack and chocolate, wider range of snack kind of products, and intensified process for preparing of centers and applying chocolate thereon.
