SUBSTANCE: claimed method includes: a) concentration of milk or reduced dehydrated milk concentrate with pH 5.0-6.0 by ultrafiltration or dialysis to form retentate; b) addition of protein concentrate or isolate into said retentate; c) mixture heating to produce homogenous consistence. Cheese obtained by claimed method also is disclosed.
EFFECT: cheese with prolonged storage time without losses of organoleptic and physical characteristics; accelerated method for cheese production of reduced cost.
