FIELD: brewing industry.
SUBSTANCE: claimed method includes light malt mashing with raw barley, preliminary treated in barohydrothermal regime, filtration of obtained mash, boiling thereof with hop products, fermentation, afterfermentation, clarification and bottling. Barohydrothermal treatment of raw barley is carried out at temperature of at most 200°C under steam pressure of at least 0.5 MPa for at most 60 s to obtain barley moisture of 12.3-15 % without losses of corn integrity. For mash production treated corn is taken in amount of 40 % or less. Mashing is carried out by infusion method at starting temperature of 40°C. Method of present invention makes it possible to increase raw barley extract content and total effectiveness of α- and β-amylases. Moreover mash viscosity is less than standard one at the same or higher content of dry matters, therefore in followed filtration process mash contact with air may be decreased and mash oxidation may be essentially prevented.
EFFECT: beer with increased resistance to cold feculence.
