FIELD: method for producing sorts of flour with increased food safety extent.
SUBSTANCE: method involves milling preliminarily cleaned and moistened grain; preliminarily or simultaneously with milling procedure, bringing grain into contact with ozone produced from carrier gas, preferably in an amount of from 0.5 g to 20 g of ozone per kilogram of grain, with grain moistening water being preliminarily processed with ozone. Method is performed directly on production ground regardless of amount of grain to be processed. Also, apparatus for producing of such flour is described.
EFFECT: increased efficiency by keeping technological properties of flour desirable for bread making.
