SUBSTANCE: claimed product includes lactic bacteria, for example 0.05-35.5 mass % concentrate or sour milky product based on Lactobacillus acidophilus strain N.V.EP 317/402 having titer of 107-1011 CFU/ml; 15.0-40.0 mass % components for improvement of organoleptic characteristics and balance: milky additive. Sour milky product for preparation of dessert in form of ice-cream contains cow unskimmed milk and milk butter or coconut oil, or mixture thereof in ratio of 1:1, unskimmed or defatted desiccated milk. Sour milky product for preparation of dessert in form of mousse as milky additive contains milk butter or coconut oil, or mixture thereof in ratio of 1:1, cow unskimmed milk, defatted desiccated milk or whey or mixture thereof in ratio of 2:1 and unskimmed desiccated milk. Product of present invention has sweet creamy aftertest, white-light creamy color and acceptable odor.

EFFECT: sour milky product of improved organoleptic characteristics.
