FIELD: the invention refers to food industry.

SUBSTANCE: it is used for simultaneous monitoring of active acidity and viscidity of milk with the aim of accurate definition of the moment of curdle of milk. The principle of action of a thermometric sensor of viscidity is based on the fact that increase of viscidity of milk in time of its curdle reduces convection branching from a heating silicon sensor that is reflected in sharp increase of its temperature. The device has two identical analogue inputs to one of them a thermometric sensor of viscidity is switched on and to the other - a pH-meter. The signals are digitized by two identical analogue/digital converter and are introduced through a card of conjugation into a computer.

EFFECT: a simple combined arrangement for simultaneous monitoring of viscidity and acidity of milk has high reliability, good sensitiveness and low cost.
