FIELD: food-processing industry.
SUBSTANCE: method involves the procedures of washing, inspecting, cleaning, additional cleaning, cutting potatoes, blanching to semi-ready state, packaging in bags made from doubled or multilayer film under vacuum, pressurizing and pasteurizing; before cleaning procedure, treating potatoes with lipid-containing extract of Mortierella globulifera micromycet biomass in an amount of 1-1·105 mg/t and holding for about 8 hours.
EFFECT: improved organoleptical properties of base product.
