FIELD: analytical chemistry; food industry.
SUBSTANCE: method can be used for finding vapors of oil acid in cheese serum for purpose of following usage of it for production of oil acid-based beverages. Method is based on selection of sample, preparation of detection unit for operation, detection and measurement of concentration of oil acid from calibration chart. Sample to be tested is introduced into detection cell provided with quartz piezoelectric vibrator. Electrodes of resonator are preliminary modified by β-alanine water solution in such way that weight of film after dissolver is removed would equal to 15-20 kg. Drying of modifier film is performed at 40+-2°C during 40 minutes.
EFFECT: improved speed of testing; increased number of analyses without changing sorbent.
