FIELD: food processing industry, in particular bakery industry.
SUBSTANCE: claimed method includes grinding of hardened or strained bread as well as bread discard from chip's biscuit production. Obtained breadcrumb are blended with starch-containing material, sodium hydrocarbonate and flavorings to produce moisture mass content in mixture of 32-33 %. Then product is extruded at 85-90°C and pressure of 10.5-11.5 MPa. Semimanufactured product is dried and steamed to achieve equilibrium humidity. Inflation is carried out for 5-8 s.
EFFECT: increased yield of target product.
