FIELD: food industry. SUBSTANCE: method for production of bread crackers includes grinding of stale bread to obtain particles sizing within 10 mm; mixing crumbs with water to obtain moisture content in mixture equalling 26-28% and taste additives, formation of mixture by screw extruder to obtain full gelation of mixture starch at mixture temperature of 90-100 C and pressure of 9-12 MPa; drying of semifinished product and its thermal treatment. Blades, added to bread crumbs before or during mixing with water is dry semifinished bread crackers of previous preparation preliminarily ground to particles sizing within 3 mm.
