FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for processing substandard bread includes grinding bread in crumbs, moistening crumbs to a moisture content from 26 to 28 %, extruding the mass, drying the molded semi-finished product to a moisture content of 9 to 10 %, followed by swelling in the deep-frying pan. Before moistening, the bread flour is added to the bread crumb in an amount of 10 to 50 % of its weight.
EFFECT: invention allows to increase protein nutrition and extend the range of bread crackers obtained by processing of nonconforming bread.
