SUBSTANCE: claimed method includes grinding of silver hawthorn fruits, fiber extraction under technological condition obtained by optimization of the next regression equation: Y = -5.5125+20.79ξ + 1.045τ +0.0293T +0.1001C + 0.024ξC - 0.46ξτ - 0.0059τC - 60.8ξ2 - 0.113τ2 - 0.00027T2 + 0.0008C2, wherein Y is dye-stuff concentration in extract; ξ is raw materials/extractant; τ is extraction time, h; T is extraction temperature, °C; C - alcohol concentration in extractant, %; wherein ξ = 1:5-1:6; τ = 2.7-3 h; T = 50-57°C; C = 52-58 % (ethanol solution acidified with hydrochloric acid).

EFFECT: optimal yield of anthocyans without losses of biologically active substances and taste characteristic at minimum consumption of time, energy and extractant.
