SUBSTANCE: claimed method includes emulsion production from water, salt, yeast, leavening agent, and fat; dough kneading from emulsion and high grade wheat flour, fermentation shaping and baking. For emulsion production as sugar powder from chicory roots obtained by freeze-drying is used in amount of 1.6-3.2 % based on flour mass.
EFFECT: cracker of improved quality, increased nutritional value, and prophylaxis characteristics.
