FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry, and may be used for flour confectionary products preparation. Disclosed is production method cracker, comprising preparation emulsions from water, salt, yeast, fat, kneading dough of prepared emulsion and flour, fermentation, rolling, kneading and baking of dough pieces, in which one introduces into the emulsion the prime grade bakery flour with addition of “Yantarnaya” grade Siberian millet flour in amount of 15–20 % of the total flour weight, wherein fat is represented by sunflower oil.
EFFECT: invention improves taste properties and nutritive value of the cracker.
