FIELD: flour-milling and groats industry, in particular, production of groats products in the form of multiple-component cereal flakes.
SUBSTANCE: method involves cleaning grain from contaminants; providing preliminary shelling of grain containing flowering glume; dosing grain; mixing; wetting mixture components with water to reach moisture content of 23-27%; conditioning during 12-24 hours; boiling-through mixture at pressure of 0.10-0.20 MPa; slightly drying to moisture content of 23-25%; cooling mixture; shelling to 80-85% yield of its weight; introducing into processed mixture groats components which do not need shelling, said components being selected from the group comprising whole buckwheat, cracked grain, oats groats, millet grain, corn groats; performing additional boiling-through of mixture at steam pressure of 0.05-0.10 MPa; flatting mixture for producing of flakes; slightly drying to moisture content of 12-14%.
EFFECT: increased yield of cereal flakes having increased nutrient value owing to retention of protein, vitamins, food fibers and other biologically active substances.
