FIELD: food industry.
SUBSTANCE: invention is intended for production of cereal products in the form of cereal flakes, including ones made from rye grains. Rye is cleaned from impurities, humidified to 22-26% and conditioned for 24-48 hours. Rye steamed under steam pressure equal to 0.3 MPa for 5-10 minutes till moisture content is 26-32%. Drying is performed in "boiling" layer air till moisture content is 18-20%. Grains are hulled and laminated into flakes, sieved, dried till moisture content is 11-14%.
EFFECT: method allows to improve quality and enhance nutritive value of flakes, increase yield and reduce duration of boiling.
