FIELD: production technology of food products.
SUBSTANCE: corm is purified from admixtures, moisturized to 26%, soften during 5-6 hours, made the heat treatment with infrared light with the density of light of 24-25 kW/m2 during 30-40 seconds. Then it is moisturized once more to 26% and soften during 4,5-5 hours. Then the corn is steamed with the steam pressure 0.1-0.15 MPa during 4-5 minutes, predry till the humidity of 24-25%, cool, peel till the corn yield 80-85%. Then one flakes the corn and drills the crumber and meal, predries flakes till the humidity of 12-14%.
EFFECT: increases the yield of corn flakes and decreases the length of their cooking.
