FIELD: food-processing industry, in particular, production of confectioneries, more particular, shortcake with filler.
SUBSTANCE: method involves spreading short paste into sheet and dividing it into triangular fragments approximating to shape of equilateral triangle; placing filler into center of each triangular fragment; folding fragment to close filler and imparting desired shape to semi-finished product; producing fragments from short paste spread to 1-3 mm thick short paste sheet; providing three-staged triangular fragment folding process: first stage including bending fragment portions at the side of two adjacent angles toward center of fragment and toward one another, second stage including folding fragment with bent sides toward third angle of fragment, and third stage including rolling fragment at side of bent portions toward third angle of fragment for producing of croissant kind product closed at its sides. Short paste piece is produced using sugar, flour, margarine, vanillin, and kefir. Filler is mixture of ground dried pitted and halved apricot and dried plums. Method allows product (shortcake) to be prepared which does not loose its consumer properties during storage.
EFFECT: improved consumer properties such as crispness and shortness of paste base.
