FIELD: technological processes.
SUBSTANCE: technical task of invention is reduction of concentrate preparation time. Task solution is achieved since in order to concentrate anthocyan dye out of water solutions, organic reagent extraction is applied, and organic reagent is water soluble polymer poly-N-vinylpyrrolidone, which is added in the amount of 0.1-0.5% from the initial solution mass. At that extraction is carried out in the presence of salting-out agent - ammonium sulfate in the amount of 40-43% from the initial solution mass.
EFFECT: increases extraction of anthocyan dye out of water solution during single extraction and reduces time of concentrate preparation to 3-5 minutes.
