FIELD: microbiological industry.
SUBSTANCE: the method for bakery yeast breeding provides for cultivating yeast in a nutritive broth. Said nutritive broth comprises molasses, mineral salts, biotin and sodium salt of 3,5-Di-tert-Butyl-4-hydroxyphenylpropionic acid that is additionally entered there in quantity of 10-5-10-6 g/l. The invention allows increasing the yeast yeild of 3% and improving the yeast quality by increasing their enzymatic activity: rising the yeast zymase activity of 25% and dough-raising capacity of 5 %.
EFFECT: increasing the yeast yield.
