SUBSTANCE: method involves contact of a food product or ingredient of a food product, containing muscle tissue, with a silicate of an alkaline metal. The silicate has formula M2O·m(SiO2)·nH2O, where M represents sodium of potassium, m is a number lying in the range 0.5≤m≤4, representing the number of mole(s) of the SiO2 fragment for one mole of the M2O fragment, and n represents water content, expressed in mass % of water, where 0≤n≤55%.
EFFECT: increased degree of moisture retention in the product.
