FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to meat and fish products injection solutions. Animal muscular protein water suspension is produced from animal muscular tissue by way of mixing of milled animal muscular tissue with a base intended for usage in food industry to produce animal muscular protein basic alkaline solution. Then the alkaline solution is mixed with an acid intended for usage in food industry for protein precipitation in the water composition. Then precipitated protein is milled with salt addition to produce salt in water suspension of milled animal muscular protein.
EFFECT: proposed invention allows to preserve the moisture of a manufactured or defrosted food product; the proposed solution does not clog injection syringes.
